Field Guide non-alcoholic spirits distills its own flavor profile from different types of tropical landscapes, replacing the classics from the old-fashioned liquor cabinet without alcohol. Bosses and salt marshes are present with the maintenance of the fruit bearings. A field guide to the flavors of our landscape: resinous spruce, smoked peat, spicy meadowsweet.

Flavor Extraction
Infinite flavors hide around us, but most of them when nature is wild. Each ingredient requires its own treatment to extract the exact desired flavor. Dozens of techniques are used and researched to create field guide: distilling, infusing, fermenting, aging… all to exceed the intensity of a spirit, recognize the warming mouthfeel and take you back to that one memory.
Field Guide
Is an ode to Roger Phillips' books. The first book on my shelf was about trees. Strolling through wild landscapes for these trees, mushrooms and plants that looked like the pictures from his books. After each field guide I forgot the previous one, but one thing stuck: the memory of the taste of each species. And all those little taste memories led me to field guide 0.0 spirits, in my lab - an old watermill - hidden in the wilderness.

What you cherish is what you maintain. Field Guide 0.0 is developed to share taste stories, learn from nature like Roger Phillips and my ancestors did to me and put the money back into maintaining wild nature where magical flavors and stories are hidden. Flavors are hidden in every plant, in nature you first get to know what you should respect, then what could be dangerous and then what something tastes like.
Cheers to wilderness
Field Guide foerageert, plant aan en werkt samen met telers die het landschap willen herstellen. In het weelderige landschap van Bretagne staat onze eigen smaaklab, hier testen en verbouwen we bijvoorbeeld moerasspirea, engelwortel en spar. Wordt de dulse geplukt en hout infusies ingetrokken. Dit is het smaaklab waar getest wordt om zo deze kennis te verspreiden en steeds meer agrariërs aan te haken op de verwildering van hun land met een gezond verdienmodel. In Nederland telen we verschillende weelderige kruiden en werken we samen met voedselbossen. Wil je graag meer weten over de teelten, of heb je een ingrediënt, stuur ons een bericht. Mineral pine forest Gin Tonic
De smaak van ochtenddauw, lente, fel groene sparren topjes lichten op in het nog donkere harsige bos. In deze G/T zit het bos, 7 soorten spar, foraged tonic gemaakt van lokaal gefoerageerde Nederlandse ingrediënten.
- 1 deel Mineral Pine Forest
- 1 deel Foraged Tonic
- 4 delen bruiswater
- Takje spar, (het liefste abies fraseri)
- Ijs (of harde sneeuw)
Peat on the rocks
Salt marsh peat en een blokje ijs
Doe een ijsblokje in het glas en schenk hier de Salt Marsh Peat overheen. Sip en schenk bij, herhaal dit zolang je wilt.
